The Origin of Place Odyssey
Terroir is the taste of place, so to speak. It refers to a special character of a food that expresses something of its geographic origin. It is a French word that originally referred more specifically to wine as an embodiment of different environmental qualities and cultural practices in different regions of France. Terroir has a certain mystique about it, but is sometimes attributed to local differences in soils, weather, production techniques and even cultural history. Use of the term has expanded into the realm of tea, coffee, maple syrup and other foods.   

 
   

 

As we seek to engage all of our senses in landscape, maybe none is more satisfyingly engaged than our sense of taste when we are tired and hungry after inspired miles of movement by our own two feet.
